Salted Caramel Syrup

There are so many fancy coffee syrups these days and I am not ashamed to drink my coffee with any one of them. But there will always be my classic favorite coffee add-in, the ole tried and true salted caramel. A couple tablespoons of that salty sweetness swirled in and I’m in heaven. I used to buy this syrup on amazon in bulk, but once I started making it at home, it has been just too good to ever buy in the store again. Salted caramel syrup is very easy to make, with only a few ingredients, and about 30 minutes. Give it a try and let me know how you like it!

Ingredients

  • 1 1/2 Cups White Sugar

  • 3 Cups Water, Divided (1 1/2 cups each)

  • 2 tsp Vanilla Extract

  • 1/2 tsp Sea Salt

Instructions

  1. In a medium saucepan over medium heat, add 1 1/2 cups water and sugar, stir the sugar to dissolve, stirring occasionally until it comes to a roiling boil.

  2. Once its at a roiling boil, stop stirring and continue to boil at a rolling pace until it boils down and begins to turn an amber color (see reference photos.) This could take 20-40 minutes, (usually takes on my gas stove about 25mins). Keep a close eye on your syrup at 15 minutes, it can go from perfect to burnt in a few moments.

  3. When the syrup is starting to become a warm yellow color, heat the remaining water and set aside. I usually do this step in the microwave using a measuring glass.

  4. Once syrup turns to the GOLDEN color of caramel, immediately remove from heat.

  5. VERY CAREFULLY pour the hot water into your caramel syrup and stir continuously. This must be done VERY slowly as there will be a temperature difference and splattering may occur. If the syrup begins to harden, just add a bit of heat and continue to stir until it all dissolves then remove from heat.

  6. Add vanilla extract and sea salt, stir until the salt dissolves.

  7. Let the syrup cool for about 30 minutes on the stovetop.

  8. Store the cooled syrup in a sealed container in the fridge for up to a month (our syrup never lasts that long, its just too yummy!)
